It has been fall here for a while now! Some Iowans may argue that, but this Texas girl says 'it's cold!'
In honor of cooler weather, I thought I would share a recipe that only comes out in the cooler months in our family....and it's a yummy one - Sweet (sweet) Potatoes!
I, personally, save it for last and eat it as dessert!!! And can you say super easy?!
Mix these ingredients in big mixing bowl:
3 cups sweet potatoes, mashed (I use yams in the can (3 cans) and they are perfect!)
1 cup scant sugar
1 tsp vanilla
2 eggs
1/2 cup butter
1/2 jar of marshmallow cream
Mix together and pour into 9x12 greased pan.
Topping - In small mixing bowl combine:
1 cup crushed pecans
1 cup brown sugar
1/3 cup Bisquick
1/3 cup softened butter
Mix topping ingredients together and pour/spread on top of sweet potato mix!
This is so sad, but when I made this, we were so excited to eat it (since it's been since last winter) that I forgot to get a picture of it out of the oven!! But I can assure you....it was fabulous!

Oh, yum!!! I love sweet potatoes... but (in my family) I am the only one. Maybe I'll make this dish for Thanksgiving so I won't be the only one eating it?!
